I'm sorry to say it. I hate this weather. I feel blah. I feel lazy even though I jump on the stationary exercise bike downstairs just to get "moving". We try to get outside but the coats, snowpants, mittens and God knows what else we have to throw on takes more time than the actual amount we spend outside and I can't drag myself to do it some days...like today. I want to take the girls out just to get out but the actual process from the backdoor to the car feels impossible.
Maybe it's because winter started in October this year. I would actually rather be at work doing something than stuck in the house one more day looking out the window at white snow everywhere thinking about how squirrley Wren will be by 3:30pm.
Yeah, sorry, I'm being a bummer today. I'm hoping that the cutsey pictures will brighten the page instead.
Since all I can think about is making food on cold days (and then eating it all), I have to share the best snack recipe ever. Ever. Peanut Butter Bites from Sprouted Kitchen. I whipped them up in the food processor last night, and the only part that took time was rolling them into cookie balls. Be warned, when you first chop up those almonds in there, the sound will be deafening. I'm not kidding, I thought Ellie was going to jump right out of her high chair and never forgive me with those crocodile tears. However, she recovered and amazing snacks resulted. I've eaten the majority of them so far. Go, quick, make a yummy snack to feel better about the weather!!
And because the peanut butter bites have practically vanished since last night, I'm making Smitten Kitchen's Maple Granola. Unfortunately you will have to go buy the actual cookbook to get that recipe but it will be worth it. I got it for Christmas and have made a ton of her recipes with great joy already. Her gnocchi in tomato broth was incredible..and...I made gnocchi! She must be amazing to have such a recipe that ordinary home cooks like myself can make.

Alright, Alright, enough moping about how Edmonton looks like a snow globe. I still have no idea what I'm doing this afternoon and whether or not I will indeed pry my butt off the couch and into my ice cube car for better adventures...OMG it's ONLY 1pm!!! Longest.day.ever.
