Homemade Pizza


 I really like homemade pizza. When done in steps ahead of time, it's fairly quick and easy. 
But this one was a bit involved. You can pretty much do whatever you want for pizza though, it's fairly forgiving. Just make a killer crust and the rest is easy.

I use the Martha Stewart recipe for pizza dough. I freeze it so I have some ready when it's pizza night.

Last night I realized I didn't have much to put on the pizza...so I experimented with beet greens. Why not? 
I sautéed them in olive oil, salt and pepper and lemon juice until soft. 


Next I sliced up some red pepper, pulled out some fresh mozzarella and chopped up herbs like basil and oregano.


I spread some sauce onto the dough (which I rolled out and didn't take a picture of because I was covered in flour. It's messy business!). I had made the sauce a few days ago just roasting quartered tomatoes in olive oil, salt and garlic cloves in the oven for 45 min at 350F and then pureed it. (Yeah I know, this is like, the most simplest pizza recipe of all, not!)
I turn up the crust because once I didn't and sauce dripped all over the bottom of the oven. I still haven't cleaned it. I'm too busy doing stuff like this, right?


Drop on the beet leaves, pepper and herbs...


Tear up the cheese and drizzle on some olive oil...


Bake at 425F for 18-20 min. Eat!!
